The selection and preparation that go into Allen Brothers steaks are without compare. Working with the best suppliers in the nation, we choose beef that not only meets USDA Prime and USDA Choice standards, but also our own higher requirements for consistent, reliable quality. (Any substandard beef is removed before it can enter our doors.) What's more, beef is hand selected specifically to fulfill our customers' particular needs.
Our aging process has been perfected over our 100-plus years of experience. We age beef between three to five weeks, as dictated by our expertise and our customers' requirements. And we strictly regulate everything that will come into contact with our beef, including the temperature and circulation of the air in our specially constructed aging facilities. The aging process is lengthy, time-consuming and costly, but the reward is the finest premium grade product available anywhere, with the utmost in tenderness and flavor.
